Ingredients
For the dough
- 200 g butter
- 100 g sugar
- 1 pack. vanilla sugar
- 1 egg
- 300 g wheat flour (type 550)
- 1 pinch of salt
- Some butter for the mold
- Some wheat flour for dough processing
For the filling
- 1.2 kg apples
- 2 tsp. of cinnamon
- 2 tsp lemon juice
For the streusel
- 125 g butter (room temperature)
- 80 g sugar
- 1 pack. vanilla sugar
- 200 g wheat flour (type 550)
- 1 pinch of salt
Instructions
- Knead butter, sugar, vanilla sugar, eggs, flour and salt together. Wrap the dough in cling film and refrigerate for at least 30 minutes.
- While the dough is in the fridge, peel the apples, remove the core and dice. In a bowl, mix with cinnamon and lemon juice.
- Preheat the oven to 180 degrees (circulating air: 160 degrees).
- Grease a springform pan (Ø 26 cm) well.
- Remove the dough from the refrigerator. On a work surface dusted with flour, roll out until it is the size of the springform pan plus twice the height of the edge. After putting the dough in the mold, press with your fingers until the edge is entirely covered.
- Spread apple cubes on the dough.
- For the crumble, combine butter, sugar, vanilla sugar, flour, and salt in a bowl and knead them for a few seconds until they form chunky streusel. Spread the streusel on top of the cake.
- Bake the cake in the preheated oven for 55-60 minutes. Allow to cool completely, and only then remove from the mold.
